Central is run by chef Virgilio Martínez and chef Pía León, his wife and partner.
Both have revolutionized Peruvian haute cuisine with an approach based on Peru’s biodiversity and altitudes.
They are also the founders of the Mater Initiative project, an organization dedicated to researching ecosystems, native ingredients, and producing communities in the country.

Maido is based on the perfect fusion between Japan and Peru, combining Japanese precision, balance, and aesthetics with the intensity, freshness, and diversity of Peruvian ingredients.
The dishes on the tasting menu take you on a journey through both cultures: sashimi with yellow chili pepper, nigiri with octopus anticuchero, and causas reinterpreted with ingredients from the sea and the mountains. It is a showcase of harmony, technique, and identity, seeking to highlight the best of both worlds.

Maido, a Japanese word meaning “welcome,” was founded by chef Mitsuharu “Micha” Tsumura, one of Latin America’s most renowned chefs.
The son of a Japanese father and Peruvian mother, Tsumura combines his two cultural heritages in a unique gastronomic offering: Nikkei cuisine, a fusion of Japanese techniques and Peruvian flavors.

Astrid y Gastón was founded in 1994 by Gastón Acurio and Astrid Gutsche, a couple who changed the course of Peruvian cuisine.
What began as a French restaurant ended up becoming the epicenter of modern Peruvian cuisine, combining tradition, innovation, and national pride.
