Summary
Pachamanca in the Sacred Valley | Ancestral Food
The Pachamanca is a very traditional dish that has its roots in pre-Inca times but was perfected for the time of the Incas, it is currently one of the most representative dishes in the gastronomy of Peru and in the region of Cusco.
The cultural importance of this dish is very significant due to the connection with the land because the Incas offered it as a thank you to Mother Earth and the teamwork involved. As a result, the tradition of preparing Pachamanca in family or group only on special occasions or as a symbol of hospitality is still maintained.
You can find variations in the ingredients depending on the region and local customs, as for example in the highlands of Cusco the pachamanca includes more meats such as lamb and pork while in other regions include more variety of tubers.
